Two different numbers with the same unit

A vibratory pump has a maximum pressure it can generate against a closed outlet. That is the number that reaches the box. The pressure that matters is what the water is under as it passes through a bed of ground coffee — a different figure, produced by the pump, the puck's resistance and, on many machines, a regulating valve set to bleed off the excess.

So "15 bar" and "9 bar" are not competing claims about brewing. One is a component ceiling; the other is a brewing condition. A machine can honestly print both.

Why this spec is missing from our tables on purpose. This database stores boiler architecture, PID, portafilter size, machine type and price tier, because each of those means the same thing on every machine we list. Advertised bar rating does not — so we leave it blank rather than publish a number that would rank machines by their marketing. See methodology.

What to look at instead

If pressure genuinely interests you, the specs worth reading are the ones about control, not peak: whether the machine has a PID for temperature stability, whether it does pre-infusion (36 of the 55 machines here state that they do), and whether it uses a boiler architecture that holds conditions steady while the shot runs. Those change what happens during the ~25 seconds that matter.

The honest summary

You cannot taste the difference between a 15 bar pump and a 20 bar pump, because you never taste the pump — you taste what happened at the puck. Ignore the figure. Spend the attention on the grinder — see how to split your budget — and on whether the machine can do the drinks you actually make.

Why do espresso machines advertise 15 or 20 bar?

Because it is a bigger number on a box, and it is technically true of the pump in isolation. It is one of the least useful figures in the category: it describes a component's ceiling rather than the brewing condition, and it does not distinguish two machines that both brew at roughly the same pressure.

What pressure should espresso be brewed at?

Roughly 9 bar at the coffee is the traditional target, inherited from spring-lever machines and carried into pump machines. Plenty of good espresso is pulled slightly above or below it, and some machines deliberately vary pressure during the shot. What matters is that the pressure is controlled and repeatable, not that it is high.
