Which to choose
- Boiler — the deciding spec. The Ascaso Baby T Plus uses a dual boiler and the Rocket Mozzafiato Cronometro R a heat exchanger (hx). Separate boilers for brew and steam, each independently temperature-controlled. The most stable, most flexible architecture — and the most expensive. A single boiler kept at steam temperature with a heat-exchanger tube drawing brew water through it — so you can pull a shot and steam milk at the same time. The prosumer sweet spot. This drives most of the milk-drink workflow and price difference between them.
- Who each suits. The Baby T Plus is also a good fit if your counter space is tight.
